Recipe: Ultimate chocolate chip walnut cookies



 

I’ve made multiple batches of this cookie recipe and they have to be the best chocolate chip walnut cookies ever. I think it may be the oatmeal that makes them so good! If you don’t like nuts you can always sub for more chocolate. I think they’d be great with an addition of white chocolate or the Reese’s peanut butter chips. This recipe makes exactly 3 dozen 2 ounce cookies. 

The recipe is as follows:



Ultimate chocolate chip walnut cookies

Makes 3 dozen 2 ounce cookies

  • 1lbs (4 sticks) unsalted butter 
  • 1.5c granulated sugar
  • 1.5c brown sugar 
  • 4 whole eggs
  • 3tbs vanilla
  • 1/2tsp lemon juice
  • 4.5c All purpose flour
  • 1c rolled oats
  • 2tsp baking soda
  • 2tsp kosher salt
  • 1 pinch cinnamon
  • 4 1/3c semi sweet chocolate chips
  • 3 1/2c walnuts

  1. Preheat oven to 325°F. Line baking sheets with parchment paper and set aside.


  2. In the bowl of a stand mixer, cream butter, sugar, and brown sugar on medium speed until fluffy


  3. Add eggs, vanilla, and lemon juice, blending with mixer on low speed for 30 seconds, until just mixed minutes, scraping down bowl.


  4. With mixer on low speed, add flour, oats, baking soda, salt and cinnamon (combine ingredients in a separate bowl and add one cup at a time.) Do not over mix.


  5. Remove bowl from the mixer and stir in chocolate chips and walnuts.


  6. Portion dough with a 2oz portion scoop about 2 inches apart onto the lined baking sheets.


  7. Bake for 12 to 15 minutes, or until edges are golden brown and center is still soft.


  8. Remove from oven and let cool on the baking sheets for about an hour before serving.
