Chipotle Carne Asada Tacos

Valentina, check. Tacos, check. .45, oh yeahhhhh!

Who doesn’t love a good taco? Right? For your next taco Tuesday you should definitely get some of this beef in a marinade Monday night. The smokey spicy chipotle salsa lends a big helping hand to the traditional citrusy and acidic Carne Asada. Not to mention the delicious caramelized onions that are by product of the marinade. This is a fairly easy and affordable to make recipe and a great leftovers because it can be incorporated into many other dishes. Steak chili, anyone? Put it on a warm corn tortilla, preferably white. Top on your favorite toppings and go to town. I like to have creamy ingredients, like crema, smashes avocado, and/or queso fresco to balance out the spicy sauces and beef. And always cilantro, you can’t have a good taco without the cilantro.

I’ve also included a recipe for a taco sauce. It’s almost the marinade but a little more simple. It just makes a lot but all the ingredients are still very affordable. Speaking of ingredients, if you have never had El Pato brand sauces you’re in luck. They provide the tomato base for both of the recipes and are affordable. ($.63 a can!) I hope you enjoy!

Mmmm Duck sauce. 🦆

And yes, that is my father’s high polished Firestar .45. Made in Spain in the 80’s, it is a very well balanced compact 1911 derivative chambered in .45 ACP. STAHPIN’ POWAH!!!!! And yes, those are some 30 year old Trijicon night sights as well! No, they don’t glow anymore, sadly. This pistol means a lot to me.

Smokey, Spicy, Creamy

Pistol is cocked and locked. Tacos are sauced and guac’d.
